Things You’ll Need
-
1 brick (8 ounces) sharp cheddar cheese, shredded
-
1 brick (8 ounces) pepper jack cheese, shredded
-
1 brick (8 ounces) cream cheese, softened
-
2 jars (4 ounces each) diced pimentos
-
1 cup mayonnaise
-
1/4 cup grated red onion
-
1/4 teaspoon garlic powder
-
Salt and pepper, to taste
Step 1: Shred the Cheese
Shred both bricks of sharp cheddar and pepper jack cheese. Set aside.
Step 2: Blend the Ingredients Together
Add the shredded cheeses, softened cream cheese, diced pimentos, mayonnaise and grated red onion to a medium bowl. Using a hand mixer, blend until all ingredients are incorporated. Then, season the dip with garlic powder, salt and pepper. Mix together again.
Step 3: Chill Pimento Dip and Serve
Transfer the pimento dip to a medium serving bowl, and then chill for up to 2 hours. Serve the chilled dip with tortilla chips or a sliced French baguette for an easy appetizer, or use it as a spread on more involved dishes.
